This is an appropriate recipe for a Campbell's giveaway. Take one can of Swanson chicken, one can of mushroom soup, about a quarter cup of milk, and whatever herbs your heart desires. I like fresh dill and fresh chives myself. Heat until almost boiling, and serve over fresh, hot pasta. Top with parmesan cheese and it's a quick and delicious supper that can't be beat!

I found this Chicken Pesto Spinach Salad online...
Chicken Pesto Salad by
Linda Larsen

I am going to try it!

Prep Time: 25 minutes
Cook Time: 8 minutes
Ingredients:
•16 oz. box farfalle pasta
•10 oz. container refrigerated pesto
•2 cups frozen cut leaf spinach, thawed and drained
•2 Tbsp. lemon juice
•1 cup mayonnaise
•1 cup plain yogurt
•1/4 cup milk
•16 oz. pkg. frozen baby peas
•1 (12 oz.) can white and dark meat chicken, drained
•1 red bell pepper, chopped
•1 yellow bell pepper, chopped
•1 pint grape tomatoes
•1 cup cashew halves
Preparation:
Cook pasta according to package directions and drain.
Meanwhile, in food processor, combine pesto, thawed spinach and lemon juice. Process until blended.

In large bowl, combine pesto mixture, mayonnaise, plain yogurt and milk and whisk until combined. Stir in chicken, bell peppers, and grape tomatoes. Pour peas on top. Add hot cooked drained pasta and cashews and stir to combine (the hot pasta will thaw the peas). Refrigerate at least 2 hours before serving, stirring once. Serves 8-10

I make a nice chicken salad: I put one can of chicken, drained and flaked with 6-8 diced radishes; 1/2 bunch green onions, sliced with part of the dark green included; 2 stalks of celery, diced; several tablespoons of mayonnaise (I eyeball it after mixing it in until it's the consistency I like); and salt and pepper to taste. I sometimes add a little sweet pickle relish- drained. I served it in tiny cream puff shells at a baby shower recently- it was a hit.

Confession time. Although I use Swanson's canned chicken in many ways when cooking, my favorite, the one that gave me the most pleasure, is when I opened a can for my cats. Yes, my cats. They liked tuna but too much tuna was not good for them. So, when I first started using Swanson's canned chicken for myself I would hear peeps behind me. Aha, the furballs discovered canned chicken. From there on, Swanson's canned chicken became one of their delicacies.

This is one of my favorite summertime recipes! It's simple yet exotic, and Swanson makes it so easy!

2 cans Swanson chicken
4 cups coarsley chopped fruit, such as peeled and cored pineapple, peeled and seeded mango, and/or peeled kiwifruit
2 cups coarsely chopped, peeled jicama
2 tablespoons thinly sliced green onion
1/2 cup mayonnaise or salad dressing
1/2 teaspoon finely shredded lime peel
2 tablespoons lime juice
1 clove garlic, minced
2 teaspoons Jamaican jerk seasoning or Mediterranean or Greek seasoning or 1 teaspoon Thai seasoning
1/4 teaspoon salt
Bibb lettuce
2 cups mesclun salad greens, cut into bite-size pieces
Pea shoots or watercress (optional)
Directions

1. In a very large bowl combine chicken, pineapple (or other fruit), jicama, and green onion; set aside.

2. For dressing, in a small bowl combine mayonnaise, lime peel, lime juice, garlic, seasoning, and salt. Spoon about half the dressing over chicken mixture; toss to coat well.

3. Line 4 individual serving plates with Bibb lettuce. Add mesclun mix to each plate. Arrange some of the chicken mixture on each plate. Top with pea shoots. Drizzle with some of the remaining dressing. Makes 6 to 8 servings.

My husband uses Swanson canned chicken to make chicken salad sandwiches. I really have not used it for anything else.

One can of Swanson chicken
Kosher salt and freshly ground black pepper
3/4 cup good mayonnaise, plus more for the bread
1 1/2 tablespoons chopped fresh tarragon leaves
1 cup small-diced celery (2 stalks)
8 to 10 slices health or seven-grain bread
1 package mesclun salad mix

Place the chicken in a bowl and add the mayonnaise, tarragon, celery, 2 teaspoons salt, and 1 teaspoon pepper and toss well.

To assemble, spread a little mayonnaise on half the bread slices, top with the chicken salad and mesclun mix, and cover with the remaining slices of bread. Cut in half and serve.

I love to add canned chicken to my macaroni salad that has elbow macaroni, mayo (Helman's, of course), sliced black olives, hard boiled eggs, s&p to taste. So simple, yet so good, even the dog likes it!!
