When I want to have a special lunch, I LOVE to pick up some good sushi. The problem is that my kids will eat it, too, and to be honest, sometimes I don't like to share. :) It's expensive!

Introducing PBJ Sushi!
You can substitute turkey/cheese, hummus, anything you want. Peanut Butter & Jelly just happens to be a favorite around here.
PBJ Sushi (or "Kid's Mock Sushi")
Ingredients:
Sliced Bread
Peanut Butter
Jelly
(or, your favorite sandwich fillings. Pepperoni and cheese is another favorite of ours)
Directions:
Lay a slice of bread on a cutting board and let your child roll it flat with a rolling pin or plastic drinking cup. Smashing bread is the best part!!:)
Spread a thin layer of peanut butter and jelly over 2/3 of the bread. You can also cut the crusts off if desired.
Roll it up, starting with the end spread with peanut butter/jelly, and press edges to seal.

Brilliant!!!!!! Absolutely brilliant. We just took a sushi picnic in the park today--- boy does that get expensive. My kids would like this just as much... then mama can eat all the real stuff. :):)

We made some of these for lunch today. We used turkey and cream cheese. The kids had fun and I even got my husband to help.

I started making this last year for my son's lunch, using turkey and cheese. I usually secure them with tooth picks so they don't fall apart when the lunch box gets thrown around at school. Great idea use PBJ!

lunch was seriously getting boring, then I happened upon your site and my girls and I have had a TON of fun trying out all the different recipes. Thanks for sharing all your great ideas with those of that are lost in the kitchen!
So... you would prefer to give your kid Peanut butter and jelly on sliced bread instead of healthy, nutruitious sushi? I guess it is just me, but I would just pick up a cheaper sushi roll for my kid b/c it is sure to be way healthier than pb&j... It's great that your kids like sushi. Embrace that.
That is a very good point! Sushi is so much better for you than a PBJ! Let me say that my kids get sushi quite often (a couple times a month) but since it's something I really love to eat, I can't afford to feed it to them every time I get it.
Also, they ASK all the time for the "PBJ Sushi"--it's a quick and fun lunch for them that they love. If you use whole grain breads and reduced sugar or homemade jam, it's not so bad. :)
