Creamy Minestrone & Meatballs

It's starting to get COLD here at night! Yikes!
I think autumn is officially here!
I love to make up batches of soup during the fall and winter, don't you? My friend Camie got me hooked a few years ago on freezing them in gallon Ziploc Bags to pull out for quick meals. It works great and doesn't take up too much freezer room since they lay flat. She's also the person that got me hooked on Olive Garden's Pasta Fagioli Soup, which inspired this dish!

Here's our latest favorite, Creamy Minestrone & Meatballs. I just wrote this up on Tablespoon & hope you enjoy!
Do you have a favorite soup that you make this time of year? If so, I'd LOVE to hear what it is or have the recipe to try out! I'm always lookin' for new soup ideas!

Yum! That looks great. I love making big batches of soup during the fall and winter. I will definitely have to try this one. My favorite soup to make is Pasta and Bean soup.

Delicious! I'm going to have to try this. As soon as the temperature dips below 70, I'm all about soup. I make soup, like, six nights a week ... it's like a cool-weather compulsion!

Our favorite autumn soup is Chicken Wild Rice Soup (soup has to be thick and contain meat for my husband to consider it a meal,and even my four young kids like this one.)
5 2/3 cups water
1 package long grain wild rice soup mix
1 envelope chicken noodle soup mix
1 celery rib, chopped
1 medium carrot, chopped
1/3 cup chopped onion
1 can(10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup cubed cooked chicken
In a large saucepan, combine water, rice with seasonings, and soup mix. Bring to a boil, reduce heat and cover. Simmer 10 minutes. Stir in celery, carrot and onion. Cover and simmer 10 more minutes. Stir in chicken soup and chicken. Cook 8 minutes longer.
