I tried making my stuffed pork loin with the Pineapple Mango Chipotle flavor and it's better than my original recipe! (see recipe below) Try it out for an easy and impressive summer grillin' dish.

Pineapple Mango Crab Stuffed Pork Loin
Ingredients:
Large Pork Loin (around 8 lbs., about $1.58 per lb. at Sams), cut into just under 1" slices--the butcher at Sams Club can do this for you. You'll get about 18 slices.
1 lb. lump imitation crab meat
1 1/2 c. plain bread crumbs
1 jar Pace Pineapple Mango Chipotle Salsa
Marinade Ingredients:
6 Tbsp. soy sauce
3 Tbsp. Brown sugar
1/4 tsp. powdered ginger
1 tsp. garlic
dash red pepper flakes
dash black pepper
3 Tbsp. tomato sauce (or ketchup if you're in a pinch)
Directions:
Place all marinade ingredients in a gallon Ziploc Freezer bag and mix well. Cut through side of pork loin to make a pocket (or you can just pound the pork loin flat, stuff it, and roll it up). Mix crab meat, bread crumbs and salsa in a medium bowl. Stuff about 2-3 heaping tablespoons crab mixture into pork loin pocket and place in marinade bag. Repeat with all pork loin pieces (you can fit about 6 in a bag). Marinade in refrigerator at least 30 minutes. Grill 7-10 minutes on each side. You can also freeze them and defrost when ready to grill.

I don't necessarily cook with it much but we do eat it by the truck-load! Although if I am making a Mexican dish that calls for shredded chicken I always poach my chicken in water with LOTS of salsa stirred in!
of our favorite meals is Salsa chicken, 4 chicken breast cleaned and placed in the bottom of the crock pot then cover with Pace Picante Sauce and cook on low for 8 hours. Uncover the last hour or so to let it thicken. The chicken as it cooks will fall apart and is soooo tender. Ways to eat:

Over Rice with Corn
Delicious!!!
(to quicken the process, it can be cooked on high for 4 hours too)
The easiest Pace recipe is to take your fave flavor, and pour it over a block of softened cream or neufchatel cheese. EXCELLENT dip!!
cook up some rice, take some chicken precooked- stuff you set aside and froze or cheat and buy roteserrie chicken mix together after the rice is cooked- add a cup of salsa- i use spicy and stir in black beans - wrap in a tortilla and sprinkle cheese and warm in oven or microwave and put more salasa on top
This is my favorite recipe that uses salsa. I always put salsa in my meatloaf.
Cheesy Meatloaf
1 ½ lbs. ground beef
3 eggs
1 C. salsa
1 C. dry breadcrumbs
1 stalk celery, finely chopped
1 small onion, finely minced
2 minced garlic cloves
Cajun seasoning, to taste
1 tsp. chili powder
1 tsp. ground cumin
1 tsp. dried parsley
Pepper, to taste
½ lb. sliced mozzarella
Heat oven to 350 degrees. In a large bowl, mix all ingredients, except cheese. Place half of the meat into a loaf pan; place sliced cheese on top and cover with the rest of the meat mixture. Bake 1 hour or until cooked through. Let rest for about 10 minutes before serving.
For a really easy quick meal, I take some boneless chicken breasts, top them with chunky salsa (any flavor) and bake them.

ages ago Weight Watchers Plan required numerous fish meals a week. For dinner, we(who do not like fish) used to broil the fish and then douse it in salsa! The salsa taste was stronger than the fish taste, so it made the fish more palatable.

I like mixing the salsa with green i cut green bell pepper, i chopped onion, and lean ground beef in the crockpot. Then I serve it in taco shells with cheese. Thanks for the giveaway!

Great crock pot recipe
Mix 2 cups Pace Salsa
1 Can black beans drained
1 Can corn drained
1 packet taco seasoning.
Pour over 3-4 chicken breasts in crock pot. Cook on low all day. Shred chicken and serve over rice.
I also use it as filling in tortillas, pour a can of encilada sauce over the top and some shredded cheese and bake. Absolutely delicious!
Mexican Dinner Casserole
# 1 pound extra lean ground beef
# 2 cups water
# 1 cup Pace Salsa
# 1 pkg. Kraft Macaroni and Cheese dinner
# 2 cups frozen corn
# 1/2 cup cheddar cheese
Brown ground beef in large skillet; drain. Add water, salsa and macaroni; stir. Bring to boil. Reduce heat; cover. Simmer 10 minutes or until Macaroni is tender, stirring occasionally. Add corn and cheese packed (from the mac and cheese); cover. Cook 2 minutes or until heated through. Top with cheddar cheese (and crushed tortilla chips, if desired).
My kids LOVE this! I've substituted non-Kraft macaroni and cheese, and we can't tell the difference
This is my favorite salsa recipe!
Salsa Chicken Enchiladas
Serves: 6
Ingredients:
4 Chicken breasts, cooked and cubed
3 cups Chicken broth
1/3 cup Flour
1 jar Thick & chunky salsa
1 can Diced green chilies
1 cup Chopped onion
1 tsp. Sugar
1 tsp. Cumin
½ tsp. Basil
½ tsp. Oregano
10 Flour tortillas
¾ cup Sour cream
2 cups Jack cheese
Directions:
1. In large saucepan, cook chicken broth and flour over med heat, stirring until broth thickens.
2. Reduce heat and add salsa, chilies, onion, sugar, cumin, basil and oregano; mix well and heat through.
3. Dip tortillas in salsa mixture to soften. Place a small amount of chicken and cheese in each tortilla.
4. Roll tortilla up and place in greased 9X13 dish.
5. Add sour cream to salsa mixture and mix well; pour over tortillas and top with grated cheese.
6. Bake at 400 degrees for 15-20 minutes.
FOR CHICKEN CHILI 1LB DICED SHREDDED CHICKEN TO 54 0Z NAVY BEANS (COOKED) HEAT ADD 2 CUPS SHREDDED CHEESE (I USE MEXICAN) STIR UNTIL MELTED THEN ADD I JAR PACE SALSA USE THE MEDIUM THEN ADD ONE LARGE CAN OF DICED TOMATOES STIR IN ONE CUP SOUR CREAM AND SERVE. LEFT OVERS A GREAT JUST REHEAT SLOWLY AND STIR AS TIS REHEATING
I serve salsa over cold macaroni in summer... it's super nutritious, cool and delicious!
I dump a jar of Pace Chunky salsa into the crock pot with 4 frozen chicken breasts, then cook on low for 6 hours. The chicken is delicious and easy to shred. We eat the chicken in tortillas, or sometimes I add it to casseroles!

I salt chicken breasts, sautee them in garlic and olive oil. When they're lightly browned on both sides, I spoon the salsa over the top, allowing it to drip down into the fry pan (I use the whole jar.) Then I cover the pan, lower the flame and let it simmer for 25 minutes. This is an eye-roller.

I mix salsa, black beans and corn into freshly cooked rice for a great side dish.
I make a cheater version of Texas Caviar by dumping a few cans of drained beans (black, black-eyed peas) a can of drained corn, some diced bell pepper and onion, fresh cilantro and a jar of Pace. Let it rest in the fridge for a couple of hours and set out some tortilla chips and watch it disappear! It's magic!

My favorite way to use salsa is a quick and easy lunch option.
I try to buy whole wheat tortillas and i always have bag spinach on hand. I like to add any veggies that i have, usually bean sprouts, chopped cucumber and shredded carrots. Instead of adding mayonnaise or a high calorie dressing i use a medium salsa and wrap everything together.Cheese can be added of course too;)

Our favorite recipe with Pace Salsa is chicken nachos! Cook chicken then marinade in salsa. Line a cookie sheet with tortilla chips. Top with chicken, shredded cheese, and jalapeno peppers. Bake at 350 for 10 minutes. Add your favorite accoutrements and enjoy!

Pace Salsa Verde Meatballs
Ingredients:
1 1/4 cups Pace® Salsa Verde
1 1/2 pounds ground beef
1 egg
3/4 cup finely crushed tortilla chips
4 green onions, minced (about 1/2 cup)
Directions:
Heat the oven to 350°F.
Thoroughly mix 3/4 cup salsa, beef, egg, tortilla chips and green onions in a large bowl. Shape the mixture firmly into 16 meatballs.
Place the meatballs into a 3-quart shallow baking dish. Top each with 1 teaspoon salsa.
Bake for 20 minutes or until the meatballs are cooked through. Serve with the remaining salsa.
Pace® Mini Meatballs: Prepare the beef mixture as directed above in Step 1. Shape the mixture firmly into 48 mini meatballs. Place the meatballs into a 4-quart shallow baking dish. Bake at 350°F. for 10 minutes or until the meatballs are cooked through. Serve with the remaining salsa.
Tip: For a delicious twist, you can use Pace® Pico de Gallo, Triple Pepper or Tequila Lime Salsa in this recipe instead of the Salsa Verde.
My recipe is for a Taco bake.
1 pound hamburger
taco seasoning
chilli powder
minced onion
Paco Salsa Con queso
4-5 tortillas
1/4 cup shreaded cheddar cheese
Put chilli powder and minced onion in a skillet add hamburger and cook then drain. Return to pan and put in the taco seasoning per the instructions on the packet. Then add some of the pace con queso to the meat and heat thru. then in a glass pie pan put a tortilla on the bottom then coat the the tortilla with the pace con queso (from the jar) spread then put some of the meat mixture on it. Then repeat this step until you have just enough meat for the top layer. It usually is 4 layers for me. Put somemore salsa con queso on the top then sprinkle with shreaded cheddar cheese. then bake in the oven at 400 degrees for 15 minutes. Serve and Enjoy.

A good healthy quick snack is a tortilla and melted shreaded cheese. Cut with a pizza cutter in to slices and served with Pace salsa.

SALSA PASTA
1 7 oz package elbow macaroni
1 cup frozen whole corn
1 8 oz jar salsa
1 small green bell pepper, chopped
1 14 1/2 oz can of whole tomatoes, undrained
1 cup shredded Cheddar cheese
Cook and drain macaroni as directed.
While macaroni is cooking, heat remaining ingredients (except for the cheese) in a 2 quart saucepan over medium heat; break up the tomatoes. Reduce heat to low and simmer uncovered for about 5 minutes.
Stir in the macaroni and sprinkle with cheese. Cover and let stand for about 5 minutes or until the cheese is melted.
Cheese Dip Recipe (Chile Con Queso)
Ingredients:
1 lb. Velveeta Cheese
1/2 cup Salsa
1/8 cup milk.
Directions:
Place ingredients in saucepan and heat over low heat, stirring frequently until all melted together. For microwave as above in bowl on low power. Check frequently until melted to desired consistency.

Creamy Chicken Enchiladas
From: Campbell's Kitchen
Prep: 20 minutes
Bake: 40 minutes
Serves: 6
Ingredients:
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular, 98% Fat Free or 25% Less Sodium)
1 container (8 ounces) sour cream
1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1 cup shredded Monterey Jack cheese (about 4 ounces)
10 flour tortillas (6-inch), warmed
1 medium tomato, chopped (about 1 cup)
1 green onion, sliced (about 2 tablespoons)
Directions:
Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.
Stir 1 cup picante sauce mixture, chicken and cheese in a large bowl.
Spread about 1/4 cup chicken mixture down the center of each tortilla. Roll up and place seam-side down in a 3-quart shallow baking dish. Pour the remaining picante sauce mixture over the filled tortillas. Cover the baking dish.
Bake at 350°F. for 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and onion.
Out of all the salsas and picantes, Pace is still the best.
Tamale Pie
about 1 lb hamburger
1 can creamed corn
2 cups Pace Picante
spray a 9 x 13 cake pan. Put in crumbled tortilla chips that are about to go stale for a nice base. add some water to moisten the chips.
Cook hamburger and drain fat. Add creamed corn and salsa. Pour over tortilla chips. Top with grated cheddar cheese and bake for 30-45 minutes or until cheese is melted
Although you can just pour about 1/4 cup salsa over an 8 oz block of cream cheese, for a dip, I like it blended together as "Fiesta Dip" Sells in the store deli for a couple dollars a pound.
The medium salsa works well for this.
I take 3 chicken breasts and pour a bottle of Pace Picante Sauce over them top it with Co-Jack or Cheddar cheese, and bake for at 375 for about 45 min. Serve on a bed of tortilla strips.I usually serve this with corn cake and mexican rice. Super easy supper.

Ingredients:
1 cup pace sauce
1/2 cup cheese
2 fillets of tilapia
1 cup fritos
Recipe: Lay tilapia on a cooking pan. Crusj fritos in a bag. Put pace ontop of fish then add the fritos on top. Sprinkle cheese on top and bake at 450 for 20 minutes or 10 minutes per inch of thickness.
