Works for Me Wednesday! Check out Rocks in My Dryer for all kinds of fabulous tips. Mangos were on sale this week, so we had to get a couple and make this. This salsa is Y-U-M-M-Y! It has just a tiny bit of sweet to offset the spicy. We made a large batch a couple days ago and it's gone! Thanks to my fabulous friend Kir for giving me this recipe when we visited in November. Good salsa and good friends, works for me.:)
Avocado-Mango Salsa
6 vine ripened tomatoes
1 bunch cilantro
1 bunch green onions
½ red onion, chopped
2-3 limes, juiced
1 ½ tsp. cumin
1 T. garlic powder
1 jalapeno pepper, chopped
2 Mangos
2 Avocados
Optional: If you want it a little sweeter, put in a dash of Splenda.
Chop everything & put into a large bowl. Serve with chips.

Yum! I love mango salsa but haven't thought about adding avocados to it. This sounds great!
I was lucky enough to try some and it really was so yummy! I put some on top of an a pork and cilantro omelot (?sp) and it was tasty tasty! Thanks for sharing Mandy!
Glad you like my recipe! Kir and I figure out ways to have mexican nights just when we want this salsa. I've started using a white onion instead of the red one for more kick, and I like using the fresh garlic because I like the flavor better. Your cooking site is so fun!
