I Can't Believe it's my Fridge!

Who needs a fridge makeover and $100?
Last week we took EVERYTHING out of our fridge and really cleaned it out (I won't scare you with a picture or details). I realized that a big part of healthy eating is keeping your fridge organized and stocked with good-for-you products.
So, this week, we are having a
"I Can't Believe That's my Fridge!"
Makeover Contest

sponsored by
I Can't Believe it's Not Butter!
I didn't have any help cleaning out my fridge, but I Can't Believe it's Not Butter! is going to give one of you lucky folks a $100 Grocery Gift Card, Reach Right Kit, and a disposable camera to document the transformation.

Here are some tips to get you started:
-Start with a clean-out!
-Fill it with fresh, healthy food
-Start cooking with the fresh taste of butter, the healthier way

Time's up!
We have a winner! I couldn't decide between the touching, gross, and amazing stories you sent in, so after we were done gagging, we picked a random winner...

I have to say that I LOVE I Can't Believe it's Not Butter! I keep the spray at all times in my fridge and it really makes the veggies disappear for my toddler. I also just started experimenting with it in baking and was pleasantly surprised! Here's a fresh and fabulous recipe for you to try this week:
Grilled Eggplant Caprese Salad from I Can't Believe it's Not Butter!
Ingredients:
- 4 Tbsp. I Can't Believe It's Not Butter!® Mediterranean Blend spread, divided-
1 medium eggplant, sliced into 1/4-inch-thick rounds
- 1/2 cup balsamic vinegar
- 2 Tbsp. finely chopped onion
- 2 cloves garlic, finely chopped
- 1/2 tsp. sugar- 2 large tomatoes, sliced
- 8 ounces fresh mozzarella cheese, sliced
- 1/4 cup very thinly sliced fresh basil leaves

Instructions:
Microwave 3 tablespoons I Can't Believe It's Not Butter!® Mediterranean Blend spread in small microwave-safe bowl at HIGH 30 seconds or until melted. Evenly brush onto both sides of eggplant slices. Grill or broil, turning frequently, until tender; cool.

Meanwhile, bring vinegar, onion and garlic to a boil in 1-quart saucepan over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, 15 minutes or until liquid is reduced by half. Stir in sugar until dissolved. Cool slightly, then stir in remaining 1 tablespoon Mediterranean Blend. Cool to room temperature.

Alternately layer eggplant, tomatoes and mozzarella on serving platter. Top with basil, then drizzle with balsamic reduction.

An update on our cooking contest--I am working with our sponsor and need a couple more weeks to get ready. But, here's a preview...
In May, we will be having a Lip Smackin' Healthy Food Cookoff where you can enter your very best grilling recipe! And the grand prize winner will get....you guessed it, a beautiful new grill! Yowza! We also have some amazing prize packs put together for the other two "runners-up" and I even snagged a celebrity chef for my judging panel! So, fire up those grills and start practicing while we fine-tune the details.
Disclosure: I Can't Believe it's Not Butter! provided the $100 Grocery Gift Card, Reach Right Kit, and a disposable camera for this contest. I was not compensated in any way for this post.

Why do I need a fridge make over? One word. Pregnancy. I'm pregnant, nauseated and having cravings that aren't making my family very happy.

I normally love left overs, but not now my friend. And I can't bring myself to open old leftover containers to clean them out. So, they're still in my fridge.

I never know what will strike my fancy when I'm shopping: yogurt, lettuce, ranch style beans. Nothing that will make up a meal, so my poor family never knows what mom is going to place in front of them at dinner time. I think I heard my husband refer to it as Russian roulette.

Interesting timing! My husband and I have only just this week began a new approach to eating and food. We are weeding out as much processed food as possible and trying to eat whole, natural, organic foods. I cringe when I think of the junk I've eaten over the years, it took a lot of reading and education to learn what to eat and what to avoid.

One stumbling block is when we host parties. It will be hard to pass up potato chips and the like, although I have noticed healthy alternatives. We discovered Hummus recently.

I think my fridge needs a makeover because we're middle aged, and this is when health problems due to diet can really escalate. I hate wasting food, so I've been giving some to my married kids, and still have a packed fridge and freezer. Hope I win, I need help!

I would love a fridge makeover! I have a family of 3 boys (hubby included) that switch everything around and I can't find a darn thing! Leftovers get lost in the back and turn into a science experiment and we go through a gallon of milk every day....getting organized is easy...staying organized is harder!

fridge was bough red tagged in first place so light doesn't work, dented all over, and door doesn't shut unless you shove it hard! As for food try to stay on top of the moldies but just found a hidden salad dressing leftover that had petrified into a hard moldy shell. Gross!

Would love a fridge make-over. We have 3 kids and are contantly being pulled in so many directions. I do not buy already prepared meals or mixes because I have found I am allergic to some and because they are not healthy. We are trying to teach our kids to have a balanced diet. Balancing everything is tough! If we could have help with the diet part, that would be one step in the right direction.

I wont lie in our fridge you wont find moldy stuff or past date because we can't afford it so everything gets used. If we have leftovers they go right in the freezer so we can have it again when we hit the in-between pay checks weeks. You have no idea how much a $100 grocery gift card would be such a blessing to us! We could buy like a month or more of food with that, which would be amazing! I could actually buy a gallon of milk again which we haven't had in like two months, I could buy my daughter the yogurt drinks she love but cost too much, large bags of beans that would last for months and let the family actually pick out what fruit and veggies they want instead of what's on sale. I'm honestly not trying to invoke pity or anything like that or make it seem like we never have food but to be able to actually FILL the fridge and have extra food would be so awesome!

Let's see here.
I'm going to describe my fridge (or at least what USED to be a fridge..LOL) from the top shelf, down to the poor, poor pitiful bottom shelf.

The top shelf consists of 3 gallons of milk. One with maaayyybe a cup of milk left in it, that someone was too lazy to pour out so they just left it & opened the next gallon. That gallon has about 1/2 cup left, and the 3rd gallon has been opened as well. Hmmm..the first gallon actually could be used as buttermilk, I'm sure...as I see little chunks floating around the bottom.

Okay..onto the next shelf.
Cartons of eggs, ranging from January thru May. We'll def only be eating the fresh ones! ...hope everyone takes the time to look at the dates first! :-/

The 3rd shelf actually has a spill that started on the first shelf (old milk, maybe?) that has puddled and dried. ewww. Thankfully the sugar is in a plastic container on that shelf so we can just wipe the bottom down, and not throw it away.

So..now we're to the 2 bottom "crisper" drawers.
Oh my. Hubby opened these up a few nights ago looking for something and reminded me that we DID in fact have cheese (I told him we didn't the night before). Well, little did he know that the cheese he found expired in DECEMBER! Ew. He said, "You know it's bad when cheese grows mold". LOL I think there were 2 bags of lunch meat that I had bought w/ the cheese, in hopes of making sandwhiches for a christmas party. Looking at the lunch meat now, you would think I would have bagged up wood chips and put them in the fridge. Wonder if they would make good kindlin for the fire?

AND..last but not least..
THE DOOR.
The shelves in the fridge door actually have some pretty decent marinades stocked in them. Don't mind the other couple bottles of leaked out ketchup and mayo.

...or the dead fly in the bottom corner.

Yuk.

Think I need a fridge overhaul?

...maybe we won't get Salmonella before then. LOL

I have two small kids and am a part-time graduate student. I rarely have time or energy to clean out the fridge, and if trash day is too far away I don't take out tupperware b/c I don't want it to sit in the heat for a week until trash day rolls around again (this is seriously what I tell myself). Then I miss trash day again, and again, and again, and soon I've got serious antibiotics growing in my fridge and I've ruined my tupperware.

We recently bought a new fridge because our old one died. We had to throw out a lot of spoiled food which was too bad but otherwise it was great because it was very clean and organized. Several months have passed and our fridge needs a makeover! It has always been my dream to have a well stocked fridge with all my favorites. Now that spring is here and summer is approaching I'd love to spend $100 on all sorts of fresh, delicious produce. I imagine all sorts of yummy stir-fries and salads. Please make my dream come true sooner than expected.

I haven't cleaned out my fridge in over a year. I know, yikes. I am a mom of 3, almost 4 and I also have a VERY messy husband!!
I cant tell you how many cups of milk have been tiped over in my fridge, or how many containers of apple sause go bad because they are in the WAY back and don't get seen so nobody eats it.
I think this is such a clever giveaway and I'm sure very needed in most homes. And even if I am not the one you choose... at least you have inspired me to want to deep clean with bleach and a massive scrub brush. So thank you!!

Ok. Not QUITE bad as all of that... but close. :)

On top of that we are newly married, have yet to figure out whose duties are whose and moving 1200 miles across the country. What we do have in the fridge (condiments and milk) are all 2 months past expiration. I have assigned him trash duty but doesn't that include old things in the fridge? So we are in dire need of some help!

Fridge cleanout with lots of fruit and veg,

Lots of weight to lose but I'm going to do this,
Winning would make me be in bliss!
I have lost 45 pounds, lots more to go,
I can't believe it's not Butter helps me keep calories low.
Buy some of that to spread on an asparagus spear,
Before I know it a handsome man will be calling me "Dear".
I could gain a super sweet beau,
And at my wedding I'd have a glow.

Why do I need a fridge makeover? Okay, I've never been the best at keeping things spotless and the fridge cleaned out, but one time in college I was living with four other girls. The black sludge dripping down the side of the fridge was a bit of a hint it might be time to clean the fridge inside and out. My friend Amy picked up the Publix bag and a black goo oozed to the floor from a bunch of bananas that were darker than midnight. We started defrosting the freezer but it was a bigger job than we anticipated. Courtney got a chair and sat in front of it with her blowdrier. Amber started exploring the depths of the fridge and we found a cup that was green. Amy instantly said, "Oh Jenn, that's your brussel sprouts." I wasnt' so sure. So as a joke we 'gifted' it to a friend who was in pre-med thinking he might be able to do an experiment with all that mold. He was highly impressed and started scraping away the green fuzz that was about an inch thick. After a little bit he shouted, "This isn't brussel sprouts! It's spaghetti sauce!"

Recently, my life has changed. A lot. I don't want to post the world's longest sob story on here so I'll give you the unsweetened condensed version: I turned in my boyfriend (who I'd been with for three and a half years) to the police because I found... well... let's just say that I found very disgusting, very disturbing, and very very illegal adult material on his computer.

During the course of our relationship I gained a lot of weight- we went out to eat a lot, and I adopted his eating habits (which worked just fine for him because he's a 20-something year old guy who runs a lot, but didn't work for me, the 20-something who prefers reading to running), and I became very much financially dependent on him.

Now we're not together. I'm still in school, living in an apartment with a great kitchen, but because of my school's ridiculous rules I have to be on the meal plan. The food in our dining hall is... to say the least... disgusting. All the veggies are soaked in oil, low-fat salad dressings don't exist, and I'm fairly certain they don't know what a plain grilled chicken breast is. It's impossible to eat healthy, let alone try to loose weight. I'd love to skip the dining hall and just cook for myself in my apartment, but since all of my money is in the meal plan, I really can't afford to.

I'm trying to get my life back on track. I want to eat healthy and get my weight under control while I'm still young and have a fighting chance. What's in my fridge right now? Shriveled up basil that's about two and a half months old, 1/2 a carton of milk, and an empty container that once had string cheese in it. Not exactly anything worth eating. $100 towards food would go a super super super long way, and really help me get back to being me and being happy with who me is.

Spring cleaning a fridge for health as well as cleanliness is a terrific idea. We eat fairly healthy but need to periodically go through the fridge & get rid of condiments & sauces that are unhelpful to have around if you're sticking to your convictions & making it easier to do so! It's amazing how much of the supermarket is just "dead to me" when I'm actively shopping for healthier foods- makes it a faster trip actually.

I put stuff in that, then NEW stuff get's added to the front, pushing that little unidentifiable container to the back. I might remember this a few weeks (months) later and let me tell you, it is GROSS when these containers are opened! I always seem to have at least two or three of them hidden in the back.

Funny you should ask this NOW. We had gone away last weekend and came home to this godawful smell. My husband thought the cat had died initially and started to look for him. When he was safely located, hubby continued to look. Finally (hold your nose here) he opened the refrigerator door that we keep out in the garage to house sodas and other space hogs, along with an overflow of meat, etc. from our kitchen fridge. The fridge must have died shortly after we left it alone. Suffice to say, it was putrid and nasty and gross. I think we need more than a kitchen makeover for that fridge, but since the main fridge now has to make room for a lot more stuff, it needs a makeover, too.

I don't like to throw anything away and have a lot of partial bottles in there. I also save packets of different things from restuarants and other boxes. Some of the packets are solid and I have no idea what is in them.

We need a Fridge makeover because we have had our fridge forever well since we mved in about 15 years ago. Our Fridge is not big enough to hold all the food we need for five people.

My fridge needs a makeover because it's old and cluttered

My refrigerator went kaput last week and I had to clean it out before getting a new one. I was literally gagging having to throw out the mystery leftovers that were nauseating in both smell and appearance. =0( I did feel better after getting rid of the nasty things.

Lemme just ask you this: did you know lettuce can liquefy? Well, indeed it can, and I know this based on experience. I swear, this poor 'fridge of mine is grand central for science experiments of all kinds. Everyone in the family has something in there to work on/ignore until someone finally passes out because of it and decides to throw it away. Orange rocks, kiwi hacky sacks, fuzzy pasta sauce, ploppy milk...you name it, we've smelled it.

My fridge is constantly making loud whirring noises and it doesn't sound like it will last much longer.

UHH. We need a fridge makeover badly. Our main reason? The sandwich meat, cheese, and misc. sandwich items drawer. It started with ham that started to spoil, and the man of the house said we should keep it so he could use it to fish with, well. He hasn't fished in months, and that ham is still there, along with other items that Im sure are bad or are on the way because we are too terrified to open the drawer.

I need a fridge makeover because I am running out of ideas to stock it for my 18 month old! I never know what he is in the mood for from day to day!
