So, why avocados? Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid! They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients in foods that are eaten with the fruit. Some people shy away from them because they contain fat but it's actually monounsaturated fat--the good kind that supports healthy brain function. They're great for everyone in the family!
Avocado & Peach Coladas
Serves 4
Ingredients:
1 medium avocado
1 1/2 C. frozen peaches
6 oz. coconut milk
1 medium banana
1/2 C. water
3 T. sugar (to taste)
Whipped cream and cherries (optional, to garnish)Directions:
Place all ingredients except sugar in blender and process 2 minutes until well blended. Add sugar, to taste. Pour in glasses, garnish with whipped cream, cherries, little umbrellas, pineapple, whatever you want! Enjoy!

What a fab idea! I love, love, love avos but they aren't native to the U.K, so we get ones which are small and either too hard or rotting thanks to them travelling a gazillion miles from warmer climes. Avos don't take kindly to refrigeration.
My fave way of eating them is to either slice them, or mash them, with a little vinegar or lemon juice, salt and white pepper and eat it on thick, wholewheat toast with real butter. MMMmmmmmmmmm!
I love avocados, however, I think I may be allergic to them. I limit my intake because of that. I use them for guac, of course, but I like to mash them and spread it on chipotle burgers. Mmmm.
These drinks are a great idea and I think I will make these for the kids. Have you tried freezing them into popsicles? I was wondering if that would work.

Leah, they don't taste like avocado at all--just creamy. I was surprised. The peach and coconut kind of took over.
I'm not an avocado fan, but think I'll try the smoothie for my family...this def sounds like something my hubby would love!
