Avocado & Peach Coladas

I'm a major guacomole fan but did you know that avocados are incredibly adaptable? We whipped up these amazingly delicious avocado coladas this week and they were a huge hit at our house! My kids aren't big fans of the taste of avocados but in smoothies they take on the flavor of the other ingredients. Plus, they made our drinks a lovely green (they call them "Shrek" smoothies!:))

So, why avocados? Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid! They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients in foods that are eaten with the fruit. Some people shy away from them because they contain fat but it's actually monounsaturated fat--the good kind that supports healthy brain function. They're great for everyone in the family!

Avocado & Peach Coladas
Serves 4
Ingredients:
1 medium avocado
1 1/2 C. frozen peaches
6 oz. coconut milk
1 medium banana
1/2 C. water
3 T. sugar (to taste)
Whipped cream and cherries (optional, to garnish)
Directions:
Place all ingredients except sugar in blender and process 2 minutes until well blended. Add sugar, to taste. Pour in glasses, garnish with whipped cream, cherries, little umbrellas, pineapple, whatever you want! Enjoy!
