Skillet Fajitas & Giveaway

How about a quick dinner while you're planning your Memorial Day Weekend? Last week we whipped up some Skillet Fajitas with Tyson's Frozen Grilled & Ready Chicken.

Skillet Fajitas

Ingredients:
1 bag (22 oz) Tyson Frozen Grilled & Ready Chicken Breast Strips
1 red bell pepper, cut into strips
1 medium onion, cut into strips
1 Tbsp. olive oil
2 tsp. fajita seasoning

1 can fat-free refried beans
whole wheat tortillas
shredded lettuce, cheese, salsa, and your favorite fajita toppings


Directions:
Heat olive oil in a large skillet over medium-high heat. Add peppers and onions and cook until onions start to turn clear. Add chicken and fajita seasoning and cook for 4-5 minutes until chicken is warm and onions are caramelized. Serve with tortillas and your favorite fajita toppings. Enjoy!

Those fajitas look great. We'll have to try them. Our favorite quick and easy meal is ceasear salad wraps.

Stir together:
Grilled & Ready chicken strips (warmed in a skillet with olive oil)
Romaine lettuce
Slice olives
Fresh grated parmesan
Thinly sliced cucumbers
Ceasar dressing (Our favorite is the Safeway Select brand "Fresh Garlic Ceasar Dressing")

Scoop into tortillas and roll up. Yum. (Fresh tomatoes would be great in this too, if I liked raw tomatoes)

My favorite quick and easy meal depends on the day. :) Some of my favorites are jazzed up hammy cheesy sandwiches, anything breakfast oriented (much to the hubby's dismay), and spaghetti. Those are the best meals at our house because everyone eats them...others that are equally easy aren't always eaten with such fervor.

ANYTHING quick and easy is a surefire way to my heart, so I would love to win those chicken products!
A quick go-to meal at my house are cheesy buffalo chicken wraps.

INGREDIENTS:
8 oz. pkg. cream cheese, softened
1/2 cup blue cheese or ranch salad dressing
1/2 cup any flavor hot sauce
1/2 cup crumbled blue cheese or shredded mozzarella
2 cans (9.75 oz. each) Chunk Chicken Breast in Water, drained
8 large flour tortillas
2 cups shredded lettuce

DIRECTIONS:

1. HEAT oven to 350°F. Place cream cheese into deep baking dish. Stir until smooth.
2. MIX in salad dressing, hot sauce, and cheese. Stir in chicken.
3. BAKE 20 min. or until mixture is heated through; stir.
4. Place mixture inside of a tortilla along with 1/4 cup of shredded lettuce and ENJOY!

My favorite quick and easy meal is when my husband fires up the grill! (No work for me!) In the winter, though it is stromboli. Just roll up some thawed bread dough with cheese and meat. Slice top and bake for 20 minutes! Serve it with sauce on the side-yum! (Never thought about making it with chicken, but it would probably be great!) B frymanfour(at)yahoo(dot)com

Quick? Easy? Our fave is cheese enchiladas...a stick of cheddar cheese wrapped in a warm corn tortilla, smothered in homemade enchilada sauce and melted in the microwave in five minutes flat~

Chicken with a white wine sauce over rice is my favorite easy, quick, go-to dinner. There are only five ingredients (plus rice) and it tastes fantastic :)

Pulled Pork Sandwiches. We buy a pork loin from costco - cut it in thirds. Place 1/3 in a crock pot with a whole bottle of BBQ sauce. Let it cook on low for 6 hours. Shred the meat and let cook about another hour. Serve on toasted hamburger buns!

I love these chicken strips for salads!

Southwest Casserole
1 can corn
1 can hominy
1 can diced tomatoes
1 can black beans

Mix it all together and pop it in the oven at 350 until heated through (20-30 minutes). Cover with shredded cheddar cheese and put back in until cheese melts.

Eat with tortilla chips or Doritos!

So simple, yummy, and CHEAP!! I just use whatever I have in my pantry. I have used double corn, creamed corn, kidney beans, Rotel, whatever.

My quick and easy meal is usually breakfast burrito. I don't always have cooked chicken handy for making a chicken burrito, so I cook up an egg with garlic and chili pepper and throw it on a tortilla withe some spinach, salsa, sour cream, beans and cheese!. MMM!

Our favorite quick meal...ravioli with tomato sauce and a little cheese melted on top. YUMMY!! =) Those chicken strips would be awesome in chicken/bacon/cheddar quesadillas!!

My quick and easy meal is Chicken Fajitas. I always have Low Fat tortilla wraps and shredded light Mexican cheese. Just pick up a rotisserie chicken at the grocery store, shred the chicken, add the cheese and voila', chicken quesadillas!

My favorite quick and easy meal is seared scallops w/spaghetti. While I cook the spaghetti, I just salt & pepper some scallops, sear each side for about 3 mins. Then I'll throw some frozen asparagus drizzled with some soy sauce in the microwave for a few minutes and voila, dinner is ready in about 10 minutes.

My Favorite quick meal is chicken salad sandwiches. It's super easy and even easier if you have pre-cooked chicken on hand. I like to make it a little more special and serve it on croissants. Don't forget to add fresh basil, it makes all the difference!

I've been making pizza dough on the weekend...and keeping it in the refrigerator for those "quick n' easy" type dinner nights....white pizza, regular pizza, garbage bread...whatever we are feeling like at the time.
I also utilize my pasta and 'quick sauce' on those "Q n'E" nights...the meat sauce is literally done when the pasta is done...served with a salad ~~ wah-la! Dinner is served!

I would say the quickest would be tacos or what we call "ABC over rice". For that, brown meat(we use turkey) with about half an onion or more if you like. add two cans ABC vegetable soup and heat. serve over rice.

My favorite quick meal is burritos.

I brown up some ground meat in a pan (usually chicken or turkey). Season with taco seasoning.

I make some boil in bag rice, heat up some black beans, and whole wheat tortillas and serve with sour cream and cheese!

I love easy meals!

spaghetti or quishe (well my version)
I saute mushrooms and then later add spinach. While that is cooking I make a quick pie crust. I cook the pie crust for about 4 minutes. I then add cheese and the mushroom/spinach tto the crust. I mix 3 eggs and 1/3 c milk and add to pie crust. Bake at 375 for about 30 to 40 minutes

Brown the meat, add black beans and rice, stack with tortillas pour sauce over top with cheese, bake and enjoy.

ONE of my quick and easy meals that we love is my 'Better Than Eggs Benedict' for breakfast or brunch. Hard cooked eggs and bacon on toasted and buttered english muffins with my fabulous cream cheesy sauce. Yum. It is not only quick and easy but loved by my family, friends and guests. It is very company worthy and not only tastes delicious but makes a beautiful presentation in just minutes.

Store bought/favorite pizza shop/or pillsbury rolled in a can pizza dough. Flatten it out and put anything left over right down one side, left over cold cuts that you think might go to waste, or meatballs, or left over chicken with cheese and salsa, or even left over veggies - spinach/broc etc with some cheese - fold over the other side - bake and you have a delicious calzone...! Dip in sauce. Yum. Very easy and you use up something that might otherwise go to waste. And you could bake and freeze for a later time.

Hi! My favorite quick and easy meal also uses tortillas. I make quesadillas using whatever I have on hand. I lay 3 or 4 tortillas on a baking sheet and then start layering on the ingredients. Refried beans, leftover chicken or turkey, shredded cabbage, sliced veggies, etc. Then I place another tortilla on top of each quesadilla and bake in a 350 ... See Moredegree oven for about 15 minutes. I garnish with shredded cheese, sour cream, salsa...whatever I have available. These are so good and cleanup is minimal! The Tyson grilled chicken breast strips would be great to use for quesadillas!

I like to make chicken fried rice. It's easy, and it gives me something to do with my chicken and/or rice leftovers. Tyson grilled chicken breast strips would make this an even simpler meal, since you don't have to "cook" or cut the chicken up... unless you want it smaller. If I'm in the mood for this meal, but don't have leftover rice (and I don't feel like cooking up a pot of it) I use a bag of steamfresh rice. It only takes about 2 and half to 3 minutes to cook in the microwave and it's surprisingly good.

You need garlic, eggs (beaten), onions, your favorite stir-fry veggies, rice, chicken, salt & pepper, soy sauce, and pineapple chunks (drained).
Sautee the garlic, then add everything but the pineapple. Mix it all up and keep frying it until the eggs and veggies are cooked. Throw in the pineapples, mix them in well. I like to serve it with some cut or crushed caramelized pecans on top (but that's just me).

Breakfast for dinner is one of our favorites. We're actually having it tonight. Another is taco salad, or nachos with homemade salsa poured on top and cooked in the oven:

Can of corn
Can of black beans
Chopped onion
Chopped tomatoes, whatever kind
Cilantro
Lemon or lime juice

Mmmmm, good.

May favorite easy meal is a salad made with any veggie in the frig. Salad base, apple, cut up chicken or tuna, raisins, cubes of mozarella, dressing of your choice and Voila! Garbage Salad!

Breaded chicken strips and pasta/potato cubes. Mash up cereal for the breading and 15 minutes later dinner is ready! It's a family favorite when I use Fruit Loops.

One of my fav simple meals is making chicken and cheese BBQ fajitas using precooked chicken mixed with taco seasoning, add in shredded cheese and place in foil and grill on the BBQ...kids love these great for camping trips as well

I just found your blog, when I saw you on 247 Moms! My favorite easy meal is Crescent Roll Pizza, Spread out crescent rolls on a cookie sheet. Pinch seams together if they start to come apart. Bake 5 min. Remove from oven and spread with 3/4 of a tub of alouette spreadable cheese (found in the dairy aisle), Mozzarella cheese, and sliced strips of deli turkey. Top with a few fresh basil leaves, and cook 5-6 more minutes. This pizza is delicious and great with artichoke hearts, broccoli, or peppers.

Our fave quick meal is Mexican Pizza!!

Store bought pizza dough (we prefer the Bomboli)

Half Taco sauce/Half pizza sauce
Ground chuck cook, drained, & made into taco meat.

Sauce the pizza, add taco meat, shredded cheddar cheese, finely diced bell pepper, finely diced onion.....then bake!! It's soooooo yummy! Sometimes we add diced tomatoes & shredded lettuce after it's removed from oven...if we have it on hand! It is soooooo good!

One of our favorite quick dinners is breakfast. It's cheap too! We also like chicken cresent rolls. You put cut up chicken, cream cheese, and butter in a cresent roll, bake and then top with cream of chicken soup. So easy and so yummy. We make several variations of this meal.
